Add the meat sauce and chilli powder. Bring to a boil, then simmer for 5 to 6 minutes over low-medium heat.

Add the kidney beans. Simmer for 3 to 4 minutes. If desired, add the cilantro and stir.

Garnish half of each tortilla with the meat sauce and cheese mixture. Fold the tortillas over the filling.

In a large skillet, heat a little olive oil over medium heat. Cook the quesadillas for 2 to 3 minutes on each side.
